EBX reporting “Shiba Ramen” coming to Emeryville
East Bay Express food writer Luke Tsai is reporting a new “fast-casual” ramen establishment coming to Emeryville this fall. Shiba Ramen will be the first food establishment by Jake Freed and Hiroko Nakamura, a husband-wife tandem of former chemists.
The space, described as “prominently located”, has yet to be finalized so we’ll have to begin speculating [UPDATE: Confirmed to be The Emeryville Public Market through Tablehopper.com]. Gourmet Ramen has been a recent foodie obsession that Emeryville has been left out of thus far, although our neighbors in the Golden Gate area will be getting a Noodle Theory in July. Have two ex-chemists unlocked the secret to serving delicious, fuss-free ramen in the East Bay? Dedicated noodle slurpers will have a chance to decide for themselves when Shiba Ramen, a fast-casual ramen shop that aspires to be authentically Japanese, opens this fall.
The PhD-certified brains behind the project are Jake Freed and Hiroko Nakamura, a husband-and-wife tandem of former chemists who are making their first inroads into the restaurant business. They’ve signed the lease on a prominently-located space in Emeryville (they’ll reveal the exact location when the deal is finalized), and plan to open Shiba Ramen in September.
