The Bureau 510: E’ville’s latest neighborhood restaurant

I had the pleasure of attending The Bureau 510’s “soft-opening” last night prior to today’s official opening and if this is any indication of what is to come, then I can’t wait for the final product (Another “Grand Opening” date with all the fanfare is still TBD).

James, his wife and 5 other partners have created an impressive “rustic warehouse–style” space with the attention to detail that they brought to their neighboring Thai restaurant, Summer Summer. Located in the new EmeryStation building on the prominent corner of Hollis and Powell, this burger and sandwich eatery blends trendy chic with industrial cool. The menu, created by acclaimed Chef Edward Higgins (of Four Seasons fame), is “a triumph of classic comforts and international flavors”.

I enjoyed the BBB burger (Bacon, Butter, Blue Cheese) cooked using a French method called “Sous-vide“. This method allows for a more even method of cooking and allows the meat to retain its juiciness. It was delicious (even for someone such as myself that prefers a more well-done burger). Other ingredients are provided by such local favorites as Acme, Semifreddi’s and Posh Bakery.

The Bureau’s liquor license should be in place before the end of the year with plans for 10 beers on tap including some local favorites. Additional plans for weekend brunch service are in the works.
[UPDATE] The bureau now has a full selection of draft beers, signature cocktails and Wine.

More from their Press Release:
Choose from a classic 100% certified Angus burger with shoestring fries. Or delight in a Tempura Fried Rock Shrimp Patty with wasabi mayo served on a rice “bun.” Sides include Buttermilk Onion Rings with Yellow Curry Dip and Fried Calamari with Pickles. Top it off with an Upside-down Apple Tart with Cinnamon Gelato or New York Style Cheesecake.
“We wanted to create a casual restaurant with really great burgers,” says owner James Sansangasakun. “We partnered with Edward Higgins to create the menu, because we very much love his food. It’s classic food with a world-class twist.” With seating for 65, The Bureau could become the go-to place on Hollis Street to get your burger fix.
